lb+ fresh asparagus spears
.5 C light soy sauce
.5 C good, flavorful sesame oil
Splash+ Chinese hot chili oil
Spoon lightly toasted sesame seeds |

- Trim
base and any tough portion from asparagus spears and cut into
approximately 2" lengths.
- Bring
large pot of water to rapid boil. Add cut asparagus and boil for
no more than 2 minutes. (It is best if spears do not vary too
widely in thickness).
- Remove
spears and place immediately in iced or very cold water.

When throughly cool, pat quite dry and place in suitable serving
bowl.
- Whisk
together soy, sesame and chili oils. Taste and balance dressing
accordingly.
- Pour
over asparagus and toss.
- Refigerate
until ready to serve, perhaps tossing once in interim. Toss again
before serving and garnish with lightly toasted sesame seeds.
